QUINOA AND TUNA SALAD

Quinoa and Tuna Salad

 


INGREDIENTS

  • Cooking Time: 12
  • Servings: 1
  • 30g quinoa
  • ½ can tuna
  • Mixed greens
  • ¼ cup bell peppers, julienned
  • ¼ cup diced cucumbers
  • Dressing:
  • 1 tbsp Kraft Calorie Wise Balsamic
  • 2 tbsp balsamic vinegar
  • Black pepper

DIRECTIONS

Rinse quinoa with running cold water; drain well. Add ¾ cup water and quinoa to saucepan, heat to boiling.


Reduce heat to medium-low; cover and simmer 12 minutes.


Meanwhile, wash mixed greens and dice cucumber. Arrange in bowl.


Remove saucepan from heat.


Add diced peppers, tuna, and dressing.


Cover to allow flavours to infuse.


Serve over mixed greens.

I tried this recipe last night, multiplying to serve three. It was easy and delicious. I had already prepared and had leftover Quinoa so I searched BakeSpace to find a recipe that had the ingredients already in my pantry/fridge and mixed the ingredients cold. I accidentally switched the measurements for the two basalmic ingredients but it turned out ok. I used Trader Joe's Basalmic Vinagrette instead of Kraft. I will try it again with the right ratio next time. I also didn't have any mixed greens on hand but it works well without it too. I garnished with a Mary's Gone onion cracker, also made with Quinoa. I served with a red pepper and tomato cream soup topped with parmesan, oregano and freshly ground pepper.
