QUINOA CASSEROLE
INGREDIENTS

- 1 large onion (peeled)
- 1 T olive oil
- 5-6 mushrooms, sliced
- 2 garlic cloves, minced
- 1/2 c zucchini or squash
- 1 lb ground beef, precooked
- 1 1/2 t dried sage
- 1 t salt
- 1/4 t pepper
- 1 1/2 c. chicken broth
- 1 c. quinoa (rinsed)
- 1/4 c fresh parsley minced
- 6 oz cheese
DIRECTIONS
Saute the onion in olive oil on medium heat 2-3 minutes. Add mushrooms, squash (sliced) and garlic. Cook 2-3 minutes, and add ground beef. Cook 3-4 minutes.
Add salt, pepper, broth and quinoa and bring to a boil. Reduce heat, cover, and simmer 10 minutes. Transfer to a 13 x 9 casserole and mix in parsley and cheese. Top with cheese and bake covered 30-35 minutes.
