Ingredients You'll Need
1 cup quinoa
2 large eggs
1 cup chopped onion
1 cup shredded mozzarella
2 tsp dried basil
1/2 cup cherry tomatoes diced
1/2 tsp salt
1 tsp paprika
1 tsp dried oregano
Directions
Place quinoa in 2 cups of water in covered pot bring to a boil and then simmer for 20 mins or until quinoa is tender
preheat oven to 350
mix all ingredients together except pizza sauce
bake in a mini muffin tin for 15-20 mins
dip in pizza sauce!
