ROTINI IN TOMATO CREAM SAUCE
1 pkg (500 g) rotini
4 finely chopped slices bacon
1 finely chopped onion
1 can (28 oz.) plum tomatoes, drained & pureed
1 cup whipping cream or carnation milk
1/4 cup chopped fresh basil leaves or 1 tbsp. dried
grated Parmesan cheese
Cook rotini according to package directions.
In saucepan cook bacon for 2 to 3 minutes, Add onion; saute until onion is tender.
Stir in tomato puree, simmer 10 minutes.
Stir in cream; simmer, stirring occasionally for 4 to 5 minutes.
Stir in basil.
Season to taste with salt and pepper.
Toss rotini with sauce and serve toped with cheese.
Makes 4 to 6 servings.

This is a simple meal to prepare. A salad or some meatballs or another meat is all you need to round it out.
