Why I Love This Recipe
Didn't have any shake and bake so made my own concoction that tastes better :)
Ingredients You'll Need
1 rabbit 1/2'd or 1/4rd (you'll need about 1/2 a rabbit per person)
Whole milk for soaking (I use organic grass fed or original flavored almond milk)
About 2 1/2 C panko bread crumbs plain
About 1 cup all purpose flour
About 1 heaping tsp Lawry's seasoned salt
About 1-2 tsp sugar
About 1 tsp garlic powder
About 1 tsp parsley
About 1 tsp minced onion
3-4 TBS vegetable oil
Eggs
Directions
Put rabbit in large bowl and cover w/ milk
Soak over night
Take rabbit out of milk and lay on a plate or cookie sheet to let air dry a lil while you make breading. (Give milk to pets as a treat)
In food processor add bread crumbs, flour, seasoned salt, sugar, garlic powder, parsley, onion and oil. Blend well
Generously grease baking pan and set oven to 350F
Beat eggs and dip rabbit into egg use your hand to make sure whole piece is coated
Then put dipped piece into breading making sure whole piece is coated in the breading mix
Then place each piece in baking pan
Bake in 350F oven until cooked through
