Rancho Mashed Potatoes
9 med. potatoes, peeled
1 clove garlic
1/4 c. melted butter
2 egg yolks
1/2 c. heavy cream
1/2 tsp. salt
1/4 tsp. pepper
1 (4 oz. can mushroom slices, drained
2 Tb. butter
1/4 c. finely chopped parsley
Cook potatoes in salted water with clove of garlic 'til just tender. Drain; remove garlic.
Mash potatoes with 1/4 c. butter. blend in egg yolks, cream, salt and pepper.
Cook mushrooms in 2 Tb. butter; add with parsley to potatoes and mix.
Place in 3 qr. casserole. Bake at 375º 35 min.
