Red Cabbage Slaw
1 small shredded red cabbage
1 small chopped onion
2 1/2 tsp salt
1/2 cup vegetable oil
3/4 cup sugar
3/4 cup white vinegar
Mix cabbage, onion and salt in glass or metal mixing bowl (not plastic).
In a small saucepan, mix oil, sugar and vinegar. Bring to a boil.
Pour mixture over cabbage -- do not stir.Let cabbage cool for 15 minutes.
Cover and place in refrigerator for several hours or overnight
