Red Cabbage and Bacon Salad

1 head red cabbage
1 1/2 pouncs thick sliced bacon
4 cloves garlic
1/2 cup safflower oil
1/2 cup red wine vinegar
salt and fresh ground pepper
10 ounces feta cheese

Thin slice red cabbage. Put in large bowl. Slice raw bacon into 1/4 inch strips and saute in a large skillet over medium heat until pieces are crispy and golden brown. Drain fat, reserving 1/2 cup in a heatproof container at room temperature. Mince garlic and whisk together with oil, bacon fat and red wine vinegar. Add approximately 1 teaspoon salt and 1/2 teaspoon pepper to taste. You may prepare in adevance a day ahead and stor refrigerated, kekeping sliced cabbage, bacon bits and dressing separate. Be sure to bring to room temperature before serving. Heat dressing before serving. Place bacon and red cabbage in a large bowl and toss well with warm dressing. Crumble feta into salad.
