- 1 c. red lentils
- 6 c. chicken broth
- 2 med. onions - chopped
- 2 carrots - chopped
- 1 t. paparika
- 1 t. salt
- 1 T. crushed garlic
- 2 t. butter or olive oil
- 2 c. tomato juice
- lemon juice
- Cook all ingrediants except butter/olive oil, tomato juice and lemon juice until tender, at least 30 minutes. Place in blender and process until smooth. Add butter/olive oil and tomato juice and cook until thick. Serve with a squeeze of lemon juice.
NotesThis super healthy soup requires red lentils. I use mostly homemade or garden ingredients. It can be made in a crockpot, too. I also usually double the recipe and freeze the extras in two serving size containers.
