Red Pepper Soup with Parmesan Crisps

Why I Love This Recipe


Ingredients You'll Need

3 Tblsp olive oil
1 yellow onion (chopped)
2 cloves garlic (minced)
4 red peppers (chopped)
1 orange, juiced
6 cups veggie stock
1/4 cup sherry
salt and pepper to taste

Parmesan Crisp:
2 cups of fresh grated, parmsan
2 tablespoons of olive oil
salt and pepper to taste


Directions

Heat oil. Add onion, garlic, peppers, and orange juice. Heat until peppers are soft. Add stock. Simmer 15-20 minutes.


PARMESAN CRISP: While soup is simmering, mix parmesan, salt,pepper, and olive oil in a bowl and place small heaps of mixture on to baking sheet. Heat oven to broil and cook until golden brown on top.


SOUP: After it has simmered, transfer soup to blender and blend. Return to pot. Add sherry. Simmer 3-5 minutes. Serve warm.


Garnish with parmesan crisps, a dollop of sour cream, and chives.
