Red Quinoa Salad

Serves | Prep Time | Cook Time

Ingredients

1 cup red quinoa
1 1/4 cups vegetable broth
1 onion chopped
handful of cilantro chopped
1 red bell pepper diced
1 roma tomato diced
1 large lemon juice
dash of olive oil
salt and pepper to taste


In pot bring broth to boil and add quinoa.


Cover and reduce to simmer for up to 12-15 minutes until liquid is absorbed and quinoa is tender.


Let it cool, add rest of ingredients and mix.
