Found this recipe online and its just too amazing not to share. Have changed it slightly to the ingredients I had on hand.
Ingredients You'll Need
Red Velvet Brownie Layer:
113 grams of salted butter (I used Clover brand)
1 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup cocoa powder
A few drops of red gel colouring
1 teaspoon vinegar
2 eggs
3/4 cup cake flour
Cream Cheese Layer:
240 grams of cream cheese, softened ( I used Philadelphia)
1/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
Directions
Brownie layer:
Melt butter in a the microwave
In a separate bowl add the sugar, vanilla, cocoa powder, gel food colouring, and vinegar.
Mixing well with each addition
Mix in the eggs (lightly beaten)
Using a wooden spoon fold in the flour
Pour the batter into a brownie pan ( I used a 25 by 18 cm pan)
Keep aside about 1/2 cup of the batter
Cream cheese layer:
Mix together the cream cheese, sugar, egg, and vanilla until combined ( I used a hand held mixer - took about 3 minutes on medium speed)
Using a spatula carefully spread the mixture on top of the brownie batter
Then take the 1/2 cup of brownie batter and spoon same over the brownie batter
Drag a cocktail stick through creating a nice swirl effect
Bake at 175 degrees celcius for 30 to 35 minutes
Once ready leave to cool completely before placing in the refrigerator overnight
Dust with glitter before serving (optional)
