Red Velvet Cupcakes

1 1/4 cups flour
3/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cocoa powder
3/4 cup vegetable oil
1/2 cup buttermilk
1 large egg
1 tablespoon red food coloring
1/2 teaspoon distilled white vinegar
1/2 teaspoon vanilla extract

cream cheese frosting
1- 8 oz. package cream cheese
1 stick butter
1/2 teaspoon vanilla
2 cups confectioner’s sugar

* 2 cups confectioner’s sugar

Then you:

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

I just made this recipe today and I love it. Nice texture, and tastes great. The icing recipe was wonderful also. Very tasty and creamy. I'll definitely be making this one again!
