Reese Peanut Butter Cup Cookies
1 stick butter
½ teaspoon vanilla
½ cup peanut butter
1 1/4 cups flour
1/2 cup granulated sugar
3/4 teaspoon baking soda
1/2 cup brown sugar
1 package (14 ounces) of Reese peanut butter cups
1 large egg
Cream together butter, peanut butter, granulated sugar and brown sugar. Beat in egg and vanilla. Stir together flour and baking soda and blend into creamed mixture to make smooth dough. Shape dough into 1 inch balls. Place in ungreased mini-muffin tins and bake at 375F for 8-10 minutes. Remove from oven. Push Reese cups into the center of each hot cookie until only the top of the candy shows.
Cool 10-15 minutes in pan. Remove and serve.
Makes approximately 50 cookies.
