Reuben Sandwich

Ingredients

8 slices rye or sourdough bread
1 pound corned beef, thinly sliced
Butter for spreading on bread
1 (10-ounce) jar sauerkraut, well drained (use Vlasic “Old Fashioned”)
4 slices Swiss cheese
Russian Dressing: (Combine all ingredients and mix well.)
¾ cup mayonnaise
⅓ cup ketchup
¾ teaspoon Worcestershire sauce
4 teaspoons prepared horseradish
¾ teaspoon onion, grated
1 teaspoon parsley


1. Prepare Russian dressing.


2. Heat griddle to 325 degrees.


3. To prepare sandwiches,


a. Spread butter thinly on 1 side of bread slice


b. Spread the inside of the bread slice with mixed Russian dressing


c. Add a layer of corned beef, then sauerkraut, and then Swiss cheese


d. Spread butter thinly on another slice of bread and place on top of cheese


3. Repeat steps for other 3 sandwiches.


4. Place sandwiches on heated griddle. Weigh them down (if possible) or keep putting a little pressure on tops to flatten somewhat until browned nicely. Turn; lightly brown.
