BackstoryI received this recipe from a friend at work that got it out of the newspaper. I get a little lazy sometimes as far as chopping vegetables are concerned so I use this recipe at those times.
If you want to tone down the spiciness, start with one jalapeno pepper instead of two.
- 28-ounce can of crushed tomatoes (organic if possible)
- 2 seeded jalapeno peppers
- 2 cloves of garlic
- 1 onion
- cilantro to taste
- Put the jalapeno peppers, cloves of garlic, onion, and cilantro in your food processor along with a few spoonfuls of the tomatoes and pulse a few times. Add this mixture to the remaining crushed tomatoes, and you've got terrific salsa.
