Rhubarb Cake

Ingredients

1 1/2 c. rhubarb, cut fine
1/2 c. butter, no substitute
1/2 tsp. salt
1 tsp. soda
2 c. flour
1 1/2 c. brown sugar
1 egg
1 c. sour milk or buttermilk
1 tsp. vanilla


Cream sugar and butter. Add egg and salt. Stir in sour milk, soda, vanilla and flour. Add cut rhubarb. Pour batter into 9 X 13" greased and floured cake pan. Sprinkle with mixture of 1/2 c. sugar, 1/2 c. fine coconut and 1 tsp. cinnamon over top. Bake at 375º for 30 - 35 minutes.

Notes

The topping has a sort of crunch to it that really, in my opinion, makes the whole cake!
