RHUBARB COFFEE CAKE

Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teapoon vanilla
  • 1 cup buttermilk
  • 1 1/2 diced rhubarb
  • Topping:
  • 1/2 cup sugar
  • cinnamon

Directions

  • Blend together the shortening, sugar, egg and flour. Add in the soda, vanilla, buttermilk and rhubarb. Mix well and put in a greased 9x13 pan. Sprinkle with sugar and cinnamon topping.
  • Bake at 350F for 45 min.
