Rhubarb Coffee Cake

Ingredients

1/2 cup shortening
1 1/2 cups sugar
1 egg
2 cups flour
1 teaspoon baking soda
1 teapoon vanilla
1 cup buttermilk
1 1/2 diced rhubarb
Topping:
1/2 cup sugar
cinnamon


Blend together the shortening, sugar, egg and flour. Add in the soda, vanilla, buttermilk and rhubarb. Mix well and put in a greased 9x13 pan. Sprinkle with sugar and cinnamon topping.


Bake at 350F for 45 min.
