  • Filling:
  • 3 cups Rhubard
  • 1/2 cup sugar
  • Crust:
  • 1/3 cup Sugar
  • 1/2 cup margarine
  • 1 egg
  • 1 teaspoon vanilla
  • dash of salt
  • 1 cup of flour
  • 1/4 teaspoon baking soda
  • Topping:
  • 1/2 cup of oatmeal
  • 1/2 cup of brown sugar
  • 1/2 cup margarine
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground clove
  • dash of salt.


  • Filling:
  • Cook Rhubarb and Sugar for 1/2 hour in a large saucepan over medium heat.
  • Crust:
  • Mix sugar, margarine, egg, vanilla, dash of salt, flour, baking soda until creamy.
  • Spread in the bottom of a greased baking pan.
  • Spread Rhubarb sauce over the base.
  • Topping:
  • In a bowl, mix oatmeal, brown sugar, margarine, nutmeg, ground clove, and salt until crumbly and spread evenly over the top of the pan.
  • You can either bake in the oven for 1/2 hour at 325 or refrigerate and serve when ready.
  • I enjoy it either way!

This is a recipe that I got from a friend many years ago and it is something that I make every summer when I have Rhubarb in my garden! It is very yummy!
