RHUBARB-STRAWBERRY MATRIMONIAL SQUARES

Ingredients

  • 1 1/2 Cup chopped rhubarb
  • 1 1/2 Cup sliced frozen strawberries
  • 1 1/2 Cup white sugar
  • 2 Tablespoons cornstarch
  • 1 teaspoon vanilla
  • 3/4 butter or margarine
  • 1/2 Cup packed brown sugar
  • 1 1/4 Cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 1/4 Cup rolled oats

Directions

  • 1. Preheat oven to 350F (180C)
  • 2. Lightly grease a 9x9 inch pan
  • 3. Combine rhubarb, white sugar, cornstartch, and vanilla in a saucepan/pot. Cook over low heat for 10 minutes or until thickened. Stir frequently. Cool completely
  • 4. In a large bowl using an electric mixer, cream together butter and brown sugar until creamy
  • 5. Stir in flour and baking soda
  • 6. mix in oats
  • 7. Press 2/3 mixture into baking pan
  • 8. Spread strawberry-rhubarb filling ontop of mixture
  • 9. Sprinkle with remaining crumb mixture
  • 10. Bake for 30-35 minutes or until lightly browned
  • 11. Cool completely then cut into squares
