Rhubarb-Strawberry Matrimonial Squares

Serves 12 | Prep Time | Cook Time 30-35 minutes

Ingredients

1 1/2 Cup chopped rhubarb
1 1/2 Cup sliced frozen strawberries
1 1/2 Cup white sugar
2 Tablespoons cornstarch
1 teaspoon vanilla
3/4 butter or margarine
1/2 Cup packed brown sugar
1 1/4 Cup whole wheat flour
1 teaspoon baking soda
1 1/4 Cup rolled oats


1. Preheat oven to 350F (180C)


2. Lightly grease a 9x9 inch pan


3. Combine rhubarb, white sugar, cornstartch, and vanilla in a saucepan/pot. Cook over low heat for 10 minutes or until thickened. Stir frequently. Cool completely


4. In a large bowl using an electric mixer, cream together butter and brown sugar until creamy


5. Stir in flour and baking soda


6. mix in oats


7. Press 2/3 mixture into baking pan


8. Spread strawberry-rhubarb filling ontop of mixture


9. Sprinkle with remaining crumb mixture


10. Bake for 30-35 minutes or until lightly browned


11. Cool completely then cut into squares
