Why I Love This Recipe

Years ago when I started cooking at the nursing home that I still work at, Rice Pilaf was on the menu. The other cook there cooked rice and added a bag of frozen mixed vegetables and called it rice pilaf. Well it tasted like plain rice and uncooked vegetables and the residents would never eat it so one day when I was cooking I chopped up the vegetables finely and grated a carrot because older people have a hard time chewing. I mixed it in margarine to make it moist and then added chicken soup base to give it flavor. Well the residents loved it and so did the staff that tasted it. Now when the board of directors have a dinner that we cater they still ask for my rice pilaf and the restidents still like it even though most of the original residents have passed on, the new ones like the rice pilaf as well.

Ingredients You'll Need

White Rice
half cup margarine
2 green onions
1 carrot
2 celery stems
half red pepper
3 tbs chicken soup base


Directions

Cook rice. While rice is cooking melt the margarine. Finely chop the green onion, celery and red pepper.


Grate the carrot. Add vegetables to the margarine with the chicken soup base. Add the margarine mixture to the rice and mix well.


Serve with your favorie meat.
