RICE PUDDING
Rice Pudding
This is from my very old version of the BETTER HOMES & GARDENS cookbook.
What a simple, comforting dessert for a cold winter night!
INGREDIENTS
- 3 EGGS
- 2 CUPS MILK
- 1/2 CUP SUGAR
- 1/2 TEASP SALT
- 1 TEASP VANILLA
- 1-1/2 CUPS COOKED LONG-GRAIN RICE
- 1/2 CUP RAISINS
- CINNAMON
DIRECTIONS
Pre-heat oven to 325F.
In a large mixing bowl, whisk eggs, milk, sugar, salt, and vanilla. Stir in rice and raisins. Pour mixture in a casserole (11x7) and bake 20 minutes. Remove from oven and stir to combine ingredients. Sprinkle top of casserole liberally with cinnamon and return to oven for 20-25 minutes, or until a silver knife inserted near center comes out clean. Serve warm or cold topped with whipped cream.
