1 Can Lite Coconut Milk
3 Cups of Rice (the recipe calls for basmati, but I have sushi rice on hand and that worked...)
1/2 Cup of Sugar
1 Good dash of Cinnamon
1 Dash of Allspcie
1 Dash of Nutmeg
1 Handfull of Walnuts (or pecans or pistachios)
On low heat combine the coconut milk, rice, and sugar. Let it simmer for 20 minutes, stirring occasionally.
Then add the cinnamon, allspice, nutmeg, and walnuts and simmer for another 10 minutes.
