- 1 tsp Tomato Paste
- 2 Onions diced
- 3 cups vegetable oil
- 3 Cups cooked white rice
- 1 Large Tomato de-seeded and diced
- 1 Tsp Paprika
- Salt & Pepper to taste
- Boil onions in oil, once brown (not burned) drain and save the oil. Mix the drained onions into the rice
- Mix in the tomato paste and salt, pepper, and paprika.
- Rice shouldn't be too dry. Top with diced tomato. You can add more of the oil if dry or save to flavor other meals.
NotesLove this! I like to have cold tomatoes not warm. You can even use frozen onions instead of fresh to save time.
