RICE WITH TOMATOES, ONIONS, AND OIL

Ingredients

  • 1 tsp Tomato Paste
  • 2 Onions diced
  • 3 cups vegetable oil
  • 3 Cups cooked white rice
  • 1 Large Tomato de-seeded and diced
  • 1 Tsp Paprika
  • Salt & Pepper to taste

Directions

  • Boil onions in oil, once brown (not burned) drain and save the oil. Mix the drained onions into the rice
  • Mix in the tomato paste and salt, pepper, and paprika.
  • Rice shouldn't be too dry. Top with diced tomato. You can add more of the oil if dry or save to flavor other meals.

Notes

Love this! I like to have cold tomatoes not warm. You can even use frozen onions instead of fresh to save time.
