Roast Beef a la Harry
Why I Love This Recipe
Okay, so you made a roast that was too big for dinner -- that NEVER happens in my house, LOL! My husband has a tendency to cook for an army "just in case" oh and by the way, we can make sandwiches for lunch! Well, ok, but beyond the roast beef sandwich, what else can you do with Roast beef, flank steak, London broil, et al, leftovers?? Roast Beef a la Harry, which turns the roast into a beautiful dinner!! The gravy is yummy, and can be served over a bed of buttered noodles!
Ingredients You'll Need
1 pound or so of Leftover roast beef/flank steak/London broil
1 can of Beef broth
1 Bag of Frozen mixed vegetables
Salt & Pepper to taste
2 tablespoons of Cornstarch
1/2 cup of dry Red wine
1 onion chopped into small pieces
4 cloves of garlic minced
1 Tablespoon of Olive oil
Saute onions in a Dutch oven in Olive oil until translucent, add garlic, simmer until fragrant and LIGHTLY browned. Add the meat and mix well. Add the frozen vegetables and salt & pepper and stir until all combined. Mix wine, beef broth and cornstarch together in a bowl, and pour over the meat, cook on low flame covered, until the frozen vegetables are cooked through about 15 minutes. Serve over buttered noodles. Super easy! And, most importantly, it's Roast Beef Revisited!!! They will never know it was served before!!!
