Roast Pork with Apple Honey Mustard Glaze

3 lb pork loin roast
4 Tbsp olive oil
1 medium onion, diced
2 cloves garlic, chopped
2 cups apple cider
1/4 cup honey
1 Tbsp dried oregeno
1 tsp dried sage
2 Tbsp Dijon mustard
1 tsp lemon juice
1 Tbsp worcestershire sauce
salt and pepper

Preheat oven to 350. Begin making the glaze by adding olive oil, onions, and garlic to a medium-size saucepan and cooking on high heat for 3 minutes. Add apple juice and cook until 1 cup of liquid remains, about 15 min.

While the glaze is cooking, place a large saute pan on the stove top. On high heat, add 1 Tbsp of olive oil and sear pork on all sides for about 5 minutes. Place in oven and roast approximately 30-45 min.
