Roast Tomato and Bacon Soup

Ingredients

12 tomatoes
2 medium onions
4 cloves of garlic
4 strips of bacon (6 if using streaky rashers)
1 tablespoon brown sugar
1 tablespoon olive oil
2 cups vegetable stock


Preheat oven to 200 degrees C


In a 9x12 inch baking pan put:


- onions, peeled and cut in half


- tomatoes, cut in half, cut sides up


- garlic cloves, peeled


- bacon laid over the top of the veg


Sprinkle with brown sugar


Drizzle with olive oil


Put baking pan into oven for 30 minutes, tomato tops will be roasted, bacon will be entirely dried out


Add vegetable stock to pan, and leave in oven for another 20 minutes.


Use either a blender or a hand mixer to blend the contents of the baking pan into whatever thickness you prefer for soup. The bacon will be blended into little bacon bits.
