Roasted Arvi Onion Dry Curry

Ingredients

Arvi
Red Onion
Green Chillies
Red Chilly Powder
Turmeric Powder
Mustard Seeds
Fennel Seeds
Salt
Oil (Peanut / Canola)


Finely chop Onion and green Chillies


Boil and peel Arvi (Or use frozen chopped Arvi)


Heat oil in a stir fry pan


Add mustard seeds and fennel seeds


Add onion and green chillies and sauté till light brown


Add Arvi and continue sauté for 10 minutes till it starts drying up


Add salt, turmeric and chilly powder and continue cooking


Cook till Arvi turns golden brown
