Roasted Brussel Sprouts

Serves 4-6 | Prep Time 15 mins | Cook Time 45 mins

Ingredients

2 lbs. Brussel Sprouts
1 tsp dried Thyme
1 Tsp dried Oregano
1/4 C Pine Nuts
1 tsp Garlic Powder
1/2 Tsp Kosher Salt
1/4 Tsp Pepper
1/4 C Olive Oil
1/2 C Balsamic Vinegar


Heat oven to 425


Cut bottoms off brussel sprouts and soak in a bowl of cold water for 5 mins


Drain water and cut brussel sprouts in half


Add olive oil and balsamic vinegar, marinate for 5 mins


Place brussel sprouts in a roasting pan


Add thyme, oregano, pine nuts, garlic powder, salt and pepper


Toss well to coat


Cook for 20 mins and stir well


Return to oven and cook for 25 mins more or until brussel sprouts are nicely browned and carmelized
