Roasted Garlic Aioli
1 Egg Yolk
1/2 c. Olive oil, extra virgin
1 T. Tarragon; freshly chopped
4 cloves Garlic
pinch Cayenne pepper
1 1/2 t. Lemon juice; freshly squeezed
Sea salt and white pepper to taste
Wrap raw cloves in foil, then place in a 350 degree F oven for 15-20 minutes until soft. Remove and set aside.
Place egg yolk in the bottom of a bowl (stainless steel preferred). Whisk until slightly pale yellow in color. Slowly drizzle in olive oil. Mash the cloves of garlic and whisk into the mixture. Mixture should be fairly thick.
Add tarragon, cayenne, lemon juice, salt and white pepper. Whisk to incorporate adjust seasoning. refrigerate for at least 3-4 hours.
