Roasted Pepper And Onion Wrap
5c thinly sliced onion
5c red and green bell pepper strips
4 garlic cloves, coarsely chopped
2T olive oil
1 1/2 t dried oregano
1 1/2 t salt
ground blk pepper to taste
1 1/2 c sliced seitan or tofu
1 1/2 c grated feta, smoked mozzarella, or Cheddar cheese
Preheat oven to 450. Oil large baking tray about 12x18 inches.
Place onions, bell peppers, garlic, oil, oregano, salt, and black pepper in large bowl. Toss together to coat vegetables evenly with oil, and then spread them on prepared baking hseet.
Bake for 10 minutes and then briefly stir vegetables. Bake 10 minutes more and stir again. Return to oven and continue to bake for another 5-10 minutes, until vegetables are tender and beginning to brown. Transfer vegetables to bowl, then mix in seitan and grated cheese.
Warm tortillas. Place about cup of filling on one half of each hot tortilla, roll up wraps, and serve immediately. Or if you prefer, place filling in bowl, cover tortillas with towel to keep warm, and let each person assemble and wrap his of her own
