Roasted Pepper Chicken
4 skinless boneless chicken breasts
roasted red peppers, sliced
1/4 cup milk
1 cup flour
1/2 tsp salt
1/4 tsp pepper
1/2 tsp caynne pepper
Make a deep slash down the side of each chicken breast. Stuff red pepper into the slit of each breast.
Dip in flour mixture, then in beaten egg/milk mixture then again in flour mixture.
Repeat with each chicken breast.
Fry in a heated skillet over medium with 3 Tbsp garlic olive oil til browned and cooked through.
