Roasted Potatoes and Fennel
2 lbs red new potatoes, quartered
1 fennel bulb, chunked (large pieces)
1/2 med red onion, roughly chopped
2 tbsp olive oil
salt to taste
Toss all the ingredients together and pour into a baking dish. Bake uncovered on 400 until fennel and onion begin to brown before stirring. Stir and bake until potatoes are fully cooked.
Pairs Well With
I made this last night with roasted chicken breast and it was wonderful. Fennel, when caramelized, gives off this lovely sweet flavour.
