ROASTED RED PEPPER MEATBALL SUB

Ingredients

  • Weight Watchers POINTS ® value: 4 per sandwich
  • Meatballs
  • 1 slice Weight Watchers 100% Whole Wheat bread
  • 1 egg white
  • 1 tbsp. minced onion
  • 1 tsp. bottled chopped roasted garlic
  • 1 tsp. dried Italian Seasoning
  • 1/2 tsp. salt
  • 1/2 lb. extra lean ground turkey (turkey breast)
  • Roasted Red Pepper Sauce
  • 12 oz. (1 jar) roasted red peppers, drained
  • 2 Tbsp. fat-free low sodium chicken broth
  • 4 tsp. bottled chopped roasted garlic
  • 1 tsp. dried Italian Seasoning
  • 4 Reduced Calorie Wheat Hot Dog Buns
  • 4 Weight Watchers® Garlic & Herb Cheese Wedges

Directions

  • Tear bread into small pieces; place in a medium bowl.
  • Add egg white, onion, garlic, Italian seasoning and salt; mix well.
  • Add turkey; mix to combine.
  • Cover and chill while preparing sauce.
  • In a blender container or food processor, combine roasted peppers, chicken broth, garlic and Italian seasoning; process until smooth.
  • Pour into medium saucepan; bring to a simmer over medium heat.
  • Meanwhile, form turkey mixture into 12 (1-1/2-inch) meatballs; drop into simmering sauce.
  • Cover and simmer 20 minutes, uncover and simmer until sauce has thickened. Broil cut sides of hot dog buns until golden, spread one side of each bun with 1 cheese wedge.
  • Top each with 3 meatballs and 3 tablespoons sauce. Serve immediately.
