ROASTED RED PEPPER SALSA

Ingredients

  • 3-4 ears of corn (you'll need about 2 cups)
  • 2 medium tomatoes, diced
  • 7 oz. roasted red peppers
  • 2 green onions, chopped
  • 3 Tbls. cilantro, chopped
  • 1 jalapeno, seeded and chopped
  • 2 Tbls. lime juice
  • 1 Tbls. white vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. cumin
  • 2 avocados, diced
  • olive oil

Directions

  • Brush ears of corn with a little olive oil
  • Place on a hot grill and grill until browned on all sides
  • Scrape off kernels
  • Gently toss ingredients (except avocado) to combine
  • Refrigerate at least an hour before serving
  • Add avocado just before serving
