Ingredients You'll Need
3-4 ears of corn (you'll need about 2 cups)
2 medium tomatoes, diced
7 oz. roasted red peppers
2 green onions, chopped
3 Tbls. cilantro, chopped
1 jalapeno, seeded and chopped
2 Tbls. lime juice
1 Tbls. white vinegar
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. cumin
2 avocados, diced
olive oil
Directions
Brush ears of corn with a little olive oil
Place on a hot grill and grill until browned on all sides
Scrape off kernels
Gently toss ingredients (except avocado) to combine
Refrigerate at least an hour before serving
Add avocado just before serving
