2 medium russet potatoes
6-8 baby carrots
1/4 of onion
1 red pepper - roasted
1/4 cup water

1/4 cup nutritional yeast

Peel and dice potatoes into small pieces and place in boiling water, along with carrots and onion quarter. Cook until fork tender and drain, reserving 1/4 cup of cooking water. Let cool until near room temperature then place in blender with reserved water. Blend on pulse cycle until similar in consistency to mashed potato then add in whole roasted pepper. Blend together until smooth. Add in nutritional yeast if desired. Place in bowl and enjoy with fresh vegetables or chips.
