Roasted Root Vegetables
~Any kind of root vegetables, carrots, potatoes, onions, sweet potatoes, beets, turnips, garlic, rutabaga, etc. cut into bite size pieces
~a few tablespoons of Olive Oil
~Salt & Pepper or any other seasoning you prefer
~Balsamic Vinegar (plain or reduction)
Put all ingredients into a Ziploc type bag & mix well until the vegetables are coated with oil & seasoning.
Bake on baking sheet at 400 degrees for 40 minutes or so.
Sprinkle on Balsamic Vinegar before serving.
