Robin's 14 Day Pickles

Fermented pickles keep their crisp very well!

INGREDIENTS

  • Pickles
  • 2 gallons cucumbers, cut in cubes and set in stone jar
  • water
  • 1 pint salt
  • 2 tbs powdered alum
  • Syrup
  • 10 cups sugar
  • 6 cups vinegar
  • 10 ? cinnamon bark
  • 1 tbs allspice
  • 1 tbs celery seeds

DIRECTIONS

Day 1 - Boil 1 gallon of water. Mix in 1 pint of salt. Pour over


pickles. Add water to cover. Let stand 1 week.



Day 7 - Skim off top if necessary. Drain off brine and pour on 1 gallon


of cold water.



Day 8 - Drain. Boil 1 gallon. Mix in 2 tbs of powdered alum. Pour over


pickles.



Day 9 - Drain. Boil 1 gallon of water. Pour over pickles.



Day 10 - Drain. Put in glass jar. Mix 6 cups of sugar, 6 cups of


vinegar, 10 ? of cinnamon bark, 1 tbs allspice and 1 tbs celery seed.


Bring to a boil. Pour over pickles.



Day 11 - Drain off syrup into a pan. Bring to boil. Mix in 1 cup of


sugar. Pour over pickles.



Day 12 - Drain off syrup into a pan. Bring to boil. Mix in 1 cup of


sugar. Pour over pickles.



Day 13 - Drain off syrup into a pan. Bring to boil. Mix in 1 cup of


sugar. Pour over pickles.



Day 14 - Drain off syrup into a pan. Bring to boil. Mix in 1 cup of


sugar. Place pickles in jars. Pour syrup over pickles. Seal tight.
