ROCKY ROAD BROWNIES

 

  • Cooking Time: 20-25 minutes + broiling
  • Servings: About 16 brownies
  • Preparation Time: about 15-20 minutes

Ingredients

  • 3/4 cup flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup (1/2 stick) unsalted butter or margarine
  • 1 1/2 cups (9 oz.) semi-sweet chocolate chips, divided
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1/2 cup coarsely chopped peanuts, divided
  • 2 cups mini marshmallows
  • 1/3 cup semi-sweet chocolate chips, melted

Directions

  • Preheat the oven to 350 F
  • Spray an 8 x 2 inch or a 9 x 2 inch square pan with vegetable spray
  • In a small bowl, combine the flour, baking soda, and the salt
  • In a large microwave safe bowl, melt the butter with 1 cup chocolate chips
  • Stir in the sugar, eggs, and the vanilla
  • Add the flour mixture
  • Stir until just combined
  • Stir in the remaining 1/2 chocolate chips and 1/4 cup peanuts
  • Spread the batter into the prepared pan
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out almost clean
  • Sprinkle with the marshmallows
  • Broil until the marshmallows are golden brown, about 1-2 minutes
  • Sprinkle with the remaining 1/4 cup peanuts
  • Drizzle with the melted chocolate
