Rocky Road Macadamia Nut Crunch Candy
2 cups unsalted macadamia nut halves (or other nuts, salted slightly is ok), toasted (to toast, bake at 300 degrees, stir every 5, minutes until aroma and color comes through, about 15 minutes.) 2 c = half a pound of nuts. I think the baking macadamia nuts sometimes found at Costco in a big bag has more flavor than the dry roasted lightly salted nuts that you may have to use. You can rub off the salt if you like but it as kind of interesting as is.
1 bag (10 oz.) miniature marshmallows (fluffy, not sticky). Stores may have 12 oz which is probably ok, or 16 oz which you’ll have to divide.
4 cups unmelted dark chocolate - use candy making or dipping chocolate (dime size dark chocolate pellets “dark chocolate glaze” bought at Y. Hata about 11 lb box for ~ $31 with tax. has 35 cups of chocolate in one box
2 to 2 1/2 cups Rice Krispies
Melt chocolate in microwave on high for 1 1/2 minutes (stir) and continue process every 30 seconds until smooth consistency. (Estimated time 2 – 2 1/2 minutes, but be careful not to over cook or the chocolate separates).
As soon as it comes out of the micro stir all ingredients together until everything is coated with chocolate. Pour into a 9 x 13 pan lined with foil. If desired, sprinkle finely chopped macadamia nuts on top . Refrigerate for 1 hour to set take out of pan and cut into 1 1/2" inch squares. (comes out pretty thick)
