- 8 oz fresh spinach
- grated carrots (about 3) or as many as you like
- 1 quarter pound salted mixed nuts
- 1 tsp garlic salt
- 1 tsp. paprika
- 1/4 cup white vinegar
- 1/3 cup ketchup
- 1/3 cup sugar
- 1/2 cup oil
- Toss carrots and spinach together, do not add nuts until immediately before serving.
- Mix dressing ingredients and pour on salad along with nuts right before serving.
NotesMy mom used to make this salad and dressing on special occasions and I made it when I was courting my wife as part of a romantic dinner by candle-light. It was a hit and now it's become a romantic tradition for us!
