Ropa Vieja - A Cuban Family Favorite

Serves 6 | Prep Time 15 minutes | Cook Time 8 hours in a slow cooker


*Two pounds flank steak, cut into 4 pieces
*1 red bell pepper, seeded and sliced
*1 yellow bell pepper,seeded and sliced
*1 yellow onion, sliced
*2 jalapenos, seeded and sliced
*2 cloves garlic, minced
*1 (18 ounce) jar diced tomatoes
*1 tablespoon apple cider vinegar
*1 teaspoon dried oregano leaves
*2 teaspoons ground cumin
*1 bay leaf
*2 1/2 teaspoons sea salt
*1/4 cup pimento-stuffed green olives, halved
*fresh cilantro, for garnish

1. Place all of the ingredients except the olives in a slow cooker, with the beef on the bottom.

2. Cover and Cook, undisturbed, on low for 7 hours. Add the olives and cook for an additional hour.

3. Skim any fat off of the top of the sauce, then shred the meat with 2 forks and return it to the sauce before serving.

This is a healthy take on a family favorite and can be cooked in a crock pot.
