1 pound boneless, skinless chicken breasts, cut in strips
2 tbsp olive oil
1 pkg Taco Seasoning Mix
1 can Rotel, undrained
Empty Taco Seasoning on a plate or into a plastic bag.
Add chicken strips and toss to coat.
In a large skillet, heat oil over medium heat. Add chicken and saute 5-7 minutes or until done. Stir in tomato. Simmer 10 minutes.
Makes 4 servings.
Serve over white rice.
