Rotelle with Scallops and Corn

Ingredients

1 tablespoon olive oil
1 scallion, sliced
1 medium green pepper, diced
1/2 medium red pepper, diced
8 ounces scallops
1/2 cup fresh corn kernels
1 clove garlic, minced
2 tablespoons lime juice
2 tablespoons coriander, chopped
salt and pepper
8 ounces Rotelle or penne


Heat oil and add scallions and peppers. Saute until tender about 5 minutes. Heat to high and add scallops and corn. Cook 3 minutes off heat stir in garlic, lime juice, coriander, salt and pepper. Cook pasta. Toss together.
