Rotini & Tuna Salad
12 oz tuna in water
2 1/2 cups rotini pasta, uncooked
1 cup frozen green peas, thawed & cooked
1 cup sliced celery
1/2 cup chopped bell peppers
1/2 cup chopped onions
1 cup reduced fat/fat free mayo
3 tbsp lemon juice
1/2 tsp thyme
1/8 tsp salt
1/8 tsp pepper
Cook pasta and drain. Combine tuna, peas, celery, pepper & onion. Combine all dressing ingredients and fold into salad. Cover and refrigerate for one hour before serving.
This is a really great low-fat snack, lunch, or side dish! I used whole wheat pasta and it worked awesome!
