Rotini Lasagna

Serves 6-8 | Prep Time 20 | Cook Time 45


1 pound rotini pasta
1 28 ounce jar spaghetti sauce
1 15 ounce ricotta cheese
1/4 cup chopped fresh parsley
3 cloves finely chopped garlic
1/2 cup shredded mozzarella
1/4 cup parmasan cheese
2 eggs
1/2 cup diced salami (about 1/4 inch pieces will do)

Preheat oven 350 degrees

Brown the finely diced salami several minutes (just until the fat is rendered )

Mix the ricotta , parmasan cheese ,eggs, diced salami, garlic and parsley together

then pour 1/2 of the tomato sauce into an oiled 9 x 13 baking dish

next spread 1/2 of the pasta evenly over the tomato sauce

then add the ricotta cheese mixture over the pasta

then add the rest of the pasta on top and sprinkle with 1/4 cup mozzarella cheese

cover with aluminum foil and bake for 45 min.

This recipe is quick easy and very delicious , i came up with the idea to add some salami instead of the usual ground beef. My son loved it .
