ROTINI LASAGNA

Ingredients

  • 1 pound rotini pasta
  • 1 28 ounce jar spaghetti sauce
  • 1 15 ounce ricotta cheese
  • 1/4 cup chopped fresh parsley
  • 3 cloves finely chopped garlic
  • 1/2 cup shredded mozzarella
  • 1/4 cup parmasan cheese
  • 2 eggs
  • 1/2 cup diced salami (about 1/4 inch pieces will do)

Directions

  • Preheat oven 350 degrees
  • Brown the finely diced salami several minutes (just until the fat is rendered )
  • Mix the ricotta , parmasan cheese ,eggs, diced salami, garlic and parsley together
  • then pour 1/2 of the tomato sauce into an oiled 9 x 13 baking dish
  • next spread 1/2 of the pasta evenly over the tomato sauce
  • then add the ricotta cheese mixture over the pasta
  • then add the rest of the pasta on top and sprinkle with 1/4 cup mozzarella cheese
  • cover with aluminum foil and bake for 45 min.

Notes

This recipe is quick easy and very delicious , i came up with the idea to add some salami instead of the usual ground beef. My son loved it .
