ROTINI WITH PEAS AND GOAT CHEESE

Ingredients

  • 1 cup hot cooked whole wheat rotini
  • 1/2 cup frozen green peas, thawed
  • 2 ounces crumbled goat cheese
  • 1/4 cup chopped parsley
  • 1 tablespoons balsamic vinegar
  • 1/2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 garlic clove, minced

Directions

  • 1. Combine all the ingredients in a large bowl, and toss well to coat.
