SKILLET FRANKS AND RAISINS
2 c. raisins
2 medium green peppers
1 lb. frankfurters
1 Tbsp. oil
4 tsp. prepared mustard
1 Tbsp. cornstarch
1 cooking apple, cut into
In 2-quart saucepan over high heat, bring raisins and 1 3/4 cups apple juice to boiling. Reduce heat to low; cover and simmer 10 minutes. Cut pepper into strips and frankfurters into 1-inch pieces.
In 12-inch skillet over medium heat, in hot oil, cookpeppers 5 minutes.
Add frankfurters; cook until frankfurters
are lightly browned and peppers are tender.
Add raisin mix-ture.
In a cup, add mustard, cornstarch and 1/4 cup apple juice; stir into mixture in skillet.
Add apple wedges; cook over medium heat until mixture thickens slightly and boils.
Apple should be tender; stir constantly.
