SLICE & BAKE FRUIT CAKE COOKIE

Ingredients

  • 1 C soft butter
  • 1 C icing sugar
  • 1/2 C white sugar
  • 1 egg
  • 2 TSP vanilla
  • 2 1/4 C GF baking mix (Lorenzo's)
  • 1/2 TSP baking soda
  • 1/2 C raisins (chop and place in hot water)
  • 1/2 C red cherries (chopped)
  • 1/2 C green cherries (chopped)

Directions

  • Cream butter with both sugars until light and fluffy
  • Beat in egg and vanilla
  • Combine flour and baking soda and gradually add to creamed mixture and mix well
  • Fold in raisins and cherries
  • Shape dough into logs at the desired size of cookie (yield depends on size of log)
  • Wrap logs with plastic wrap and refrigerate for 2 hours or over night
  • Slice into 1/4" thick slices
  • Place cookies 2 inches apart on an ungreased cookie sheet
  • Bake, remove to a wire rack to cool
