2 pkg. yeast
1/4 cup warm water
1 cup scalded milk
1/2 cup sugar
1/4 cup shortening
1 1/2 tsp. salt
4 - 4 1/2 cups flour
1 tsp. grd. lemon peel
2 beaten eggs
1 cup mixed diced candied fruit and peel
Soften yeast in the warm water. Combine milk, sugar, salt and shortening and cool to lukewarm.
Add 2 cups flour and the lemon peel.
Beat until smooth.
Add eggs, beat well.
Add yeast, fruit and peel and remaining ingredients to make a soft dough.
Cover and let rest for 10 minutes.
Knead on a floured surface for 6 to 8 minutes until smooth and elastic.
Place in a lightly greased bowl turning once to grease the surface.
Cover and let rise until double (2 hrs)
Punch down and divide in half.
Let rest for 10 minutes.
Shape into 2 balls.
Place on a greased cookie sheet.
Pat tops to flatten slightly.
Cover and let rise until almost double (2 hrs).
Bake at 350 degrees for 25 to 30 minutes.
While warm frost with confectioners sugar (powdered sugar) and milk.
Pairs Well With
This is a sort of fruit cake but it is more like a cake than a fruit cake. It doesn't taste like a bread. Very good. I suppose that is as clear as mud.
